I'm always on the search for great-tasting side dishes. Cauliflower rice is a sure win with the whole family. It is a simple side dish and you will enjoy a veggie that is great for you. Eating healthy does not have to be a chore. I have added different seasonings such as garlic powder, Italian seasoning or even added green onions. Make it how you like and you will find a new easy side dish!
How to Make Cauliflower Rice
1 Head of Cauliflower, I cook one cup of shredded cauliflower
1 tsp. olive oil
1 tsp. of Seasoning of your choice
1/4 cup of chicken broth
Salt and pepper to taste
Serving size: 1 cup
Shred the cauliflower in a food processor or blender.
Heat up the the olive oil in a pan. Add cauliflower and seasoning. Cook for abut 3 minutes. Add the chicken broth for moisture and it finishes it off into a great moist rice.
